Cheesy Roll Cookies

Yields : 2 dozens of ± 2 inches round cookie

Cooking Time : 1 hour for preparation and baking

Ingredients :

  • 1 portion of Cookies base recipe – here
  • 50 grams of grated Mozzarella Cheese
  • 50 grams of grated Cheddar Cheese
  • 2 tablespoons of grated Edam Cheese
  • 2-3 tablespoons of thick Sugar Syrup (optional, for the rim-side coating )

Special Utensils :

  • Rolling Pin or Icing Paper Bag
  • Lined or sprayed Baking Tray

How To :

  1. Divide the Flour into two portion, and mix one portion of it with the Baking Powder and the Cornflour/ Maizena in a separate bowl, set aside.
  2. Mix the Butter and the Powdered Sugar until creamy in other bowl, enter the beaten Egg, and mix it well.
  3. There are two options for the next step, depends to the chosen utensil:
    1. Follow below instructions when use the Rolling Pin:
      • Enter the mixed flour and the grated Mozzarella Cheese into the creamy mixture, mix it, then add the rest of the flour, and mix it again until well. Shape the dough into a ball, and flatten by the rolling pin.
      • Spread the grated Cheddar Cheese on top the flatten dough, and roll it up. Put it in the refrigerator for 5 minutes to harden, then sliced about 3-5 mm thick.
    2. Another option is easier, using an Icing Paper Bag:
      • Enter the mixed flour the Cheddar Cheese, and the grated Mozzarella Cheese into the creamy mixture, mix it, then add the rest of the flour, and mix it again until well.
      • Spoon the dough into the icing paper bag, and cut the bottom tip of the bag for 3-5 mm hole.
      • Pipe the dough with a circular move to form a rolled shape.
  4. Coat the rim-side with Sugar Syrup as taste when use it,  and spread the grated Edam Cheese on top .
  5. Bake in a preheated oven for 15-20 minutes or until golden. Remember to let it cool before store it in the air-tight container.

Notes :

  • You may add the flour for the harder result or less the flour for the softer result. This recipe uses Indonesian’s Lumbung brand flour, and may replace with any other available brand.
  • The Cheddar Cheese may replace with Parmessan / Parma Cheese.
  • The Sugar Syrup may replace with the Egg wash and some sprinkle of Granulated Sugar for the less sweet taste.
  • This recipe uses a preheated oven at 350 F, or may follow the manual of your oven for the baking temperature.
  • The photo of this recipe uses the Icing Paper Bag to shape the dough and omit the Sugar Syrup rim-side coating.
